Diego Pennacchia

Head Chef

Diego Pennacchia, a 28-year-old native of Ferentino (FR), is studying at CAMPUS ETOILE ACADEMY by ROSSANO BOSCOLO located in Tuscania, Viterbo province. He has been immersed in his local traditions since childhood, embarking on a career path from an early age. After completing his academic studies, he ventured to Dublin, Ireland, where he worked as a sous chef at the Michelin-starred restaurant PATRICK GUILBAUD. He then returned to Italy and worked alongside Chef ISIDORO CONSOLINI, an iconic figure in the development of the Lake Garda region. Subsequently, he had a winter experience at the HOTEL OBEROSLER in Madonna di Campiglio, where he took on the role of Chef de Partie. In 2019, Diego's desire to work alongside his fellow countryman, Chef ANDREA IMPERO, came true. He became part of the project at BORGOBRUFA SPA RESORT, even overseeing its opening, and over the years, he assumed various roles within the brigade. In 2021, he participated in the opening of the ELEMENTI FINE DINING project as a Sous Chef, and then received the most important opportunity through Chef IMPERO's recommendation, at the historic Villa Scacciapensieri in Siena in 2023, thus beginning his journey as a Head Chef.

Andrea Impero

Executive Chef

Andrea Impero, a 32-year-old native of Ferentino (FR), attended the Hospitality Institute in Fiuggi and learned the culinary traditions of the lower Lazio region from a very young age. At the age of eighteen, he joined Chef Alfonso Caputo's Michelin-starred restaurant TAVERNA DEL CAPITANO and worked alongside him for four years, acquiring technique, passion, and love for the industry, gaining experience in all kitchen stations under his guidance. He then spent two years in Rome with Chef Don Alfonso Iaccarino before moving abroad. His first destination was Barcelona, where he worked at the three-Michelin-starred restaurant CAN FABES under Chef Santi Santamaria. This was followed by two years in London at the Michelin-starred restaurant QUATTRO PASSI, led by Chef Antonio Mellino.

In 2015, he received the most important opportunity from Chef Marco Gubbiotti, who offered him the role of Executive Chef at the MARITOZZO restaurant in Moscow, Russia. There, he managed two operational kitchens specializing in bakery and pastry, a wine bar, and a gourmet restaurant, earning prestigious international accolades over the course of a three-year experience. Since 2019, he has been the chef of the BORGOBRUFA spa resort in Torgiano, Umbria, where he focuses on showcasing the local territory and revitalizing small breeders and farmers in Umbria. His culinary philosophy centers around the primal taste of ingredients sourced from the land, creating a menu that not only represents Umbria but also reflects a tradition deeply rooted in central Italy. He describes his cuisine as ancestral, emphasizing the importance of substance and the undeniable quality of carefully selected raw materials, embodying an ethical and sustainable approach to cooking.

Since 2021, he has been the chef of Borgobrufa's new project, the ELEMENTI FINE DINING restaurant, and also serves as a consulting chef for the RUMI RESTAURANT in Ascea Marina, Salerno, in the Cilento region.
